Rinse the bulgur and pour the juice of one lemon over it. Leave it to swell for fifteen minutes.
Wash the parsley well in advance and dry it thoroughly — an hour on a cloth is not too much. Strip the thick stems and chop it fine but without pulverising it.
Dice the tomatoes small and salt them separately: the juice they give up goes into the bulgur.
Mix everything with the juice of the second lemon, the oil and the allspice. Let it stand ten minutes before serving.
👨🍳 Chef's Culinary Notes
Cultural Heritage
Tabbouleh carries a rich culinary tradition rooted in regional home cooking. Developed over generations, the recipe highlights wholesome local ingredients prepared with time-honored kitchen techniques.
Dietary Substitutions
If you need to accommodate dietary restrictions, flat-leaf parsley (three large bunches) can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.
Chef Technique Tips
Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
