Push the curd through a sieve or blitz it. Grainy curd makes grainy syrniki; this step is not optional.
Work in the egg, sugar, vanilla and salt, then the flour. The mixture stays sticky; that is correct.
With wet or lightly floured hands shape discs about a centimetre and a half thick. Thicker and the middle stays raw, thinner and they dry out.
Fry over medium heat with a lid on, three or four minutes a side. The lid matters more than the butter: it steams the middle through.
👨🍳 Chef's Culinary Notes
Cultural Heritage
Syrniki carries a rich culinary tradition rooted in regional home cooking. Developed over generations, the recipe highlights wholesome local ingredients prepared with time-honored kitchen techniques.
Dietary Substitutions
If you need to accommodate dietary restrictions, curd cheese, 5-9% fat (dry, drained) can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.
Chef Technique Tips
Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
