Step 1

Rub the meat with salt, pepper, the juice of two lemons, crushed garlic and oil. Leave it an hour.

Step 2

Light the coals and let them ash over. The heat is right when you can hold a palm above the grate for five seconds.

Step 3

Lay the meat on in whole pieces and grill, turning every ten minutes, for an hour and twenty.

Step 4🥄 Mix

Mix the diced tomato, onion, coriander and chilli with lemon juice and salt; that is kachumbari.

Step 5♨️ Boil

For the ugali bring a litre of water to the boil, rain in the flour, stirring constantly with a wooden spoon, and work it fifteen minutes into a firm mass.

Step 6✨ Serve

Rest the meat ten minutes, cut it small across the grain and serve with ugali, kachumbari and salt.

👨‍🍳 Chef's Culinary Notes

Cultural Heritage

Nyama Choma carries a rich culinary tradition rooted in regional home cooking. Developed over generations, the recipe highlights wholesome local ingredients prepared with time-honored kitchen techniques.

Dietary Substitutions

If you need to accommodate dietary restrictions, goat meat (leg or ribs, in large pieces) can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.

Chef Technique Tips

Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
