Cut the roti into centimetre strips: that makes the chopping easier later.
Heat a large pan with the oil, fry the onion, leek and chilli two minutes, add the carrot and cabbage and cook three more.
Push the vegetables aside, break the eggs into the cleared space, let them set and break them up.
Add the chicken, curry powder and strips of roti and start chopping with two spatulas, mixing as you go. Three minutes of real work.
Pour the curry sauce down the side and keep chopping a minute more. The mixture should be moist but not wet.
👨🍳 Chef's Culinary Notes
Cultural Heritage
Kottu Roti carries a rich culinary tradition rooted in regional home cooking. Developed over generations, the recipe highlights wholesome local ingredients prepared with time-honored kitchen techniques.
Dietary Substitutions
If you need to accommodate dietary restrictions, roti or paratha (from the day before) can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.
Chef Technique Tips
Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
