Step 1

Soak the bread crumb in cold water for ten minutes and squeeze it dry.

Step 2🥄 Mix

Blend the tomatoes, cucumber, pepper, garlic and bread until completely smooth. It takes longer than you expect — a good two minutes at full speed.

Step 3

With the blender still running, pour the oil in a thin stream. The soup pales and thickens: that is the emulsion.

Step 4

Add the vinegar and salt, taste and season again. Pass it through a sieve for a silkier texture and chill for at least two hours.

👨‍🍳 Chef's Culinary Notes

Cultural Heritage

Gazpacho reflects the timeless heritage of traditional Spanish home cooking, steeped in smoky pimentón, delicate saffron, and extra-virgin olive oil. Prepared for generations for family gatherings and celebrations, it represents the heart of regional culinary identity.

Dietary Substitutions

If you need to accommodate dietary restrictions, ripe tomatoes can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.

Chef Technique Tips

Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
