Step 1

Dissolve the salt in the warm water: that spreads it evenly instead of leaving it on the bottom of the jar.

Step 2

Rub the dried oregano between your palms and steep it in the vinegar for five minutes: it softens and releases its scent.

Step 3🔪 Prep

Chop the parsley and garlic fine with a knife. The garlic is chopped rather than crushed: crushed it gives a sharpness that never leaves.

Step 4🥄 Mix

Mix everything together, pour in the oil and stir. Let it stand two hours at room temperature.

👨‍🍳 Chef's Culinary Notes

Cultural Heritage

Chimichurri carries a rich culinary tradition rooted in regional home cooking. Developed over generations, the recipe highlights wholesome local ingredients prepared with time-honored kitchen techniques.

Dietary Substitutions

If you need to accommodate dietary restrictions, flat-leaf parsley (finely chopped) can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.

Chef Technique Tips

Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
