Step 1

Rub the inside of the pot with a cut clove of garlic and leave it in.

Step 2

Toss both grated cheeses with the cornflour by hand until every shred is coated.

Step 3♨️ Boil

Warm the wine with the lemon juice until bubbles appear at the edge, but not to a boil.

Step 4

Add the cheese a handful at a time, stirring in a figure of eight until each is fully melted before the next goes in.

Step 5

When the mass turns even and strings from the spoon, add the kirsch and season with nutmeg and pepper.

Step 6

Move it to the burner and keep the flame at its lowest. The bread is speared through the crust rather than the crumb.

👨‍🍳 Chef's Culinary Notes

Cultural Heritage

Cheese Fondue carries a rich culinary tradition rooted in regional home cooking. Developed over generations, the recipe highlights wholesome local ingredients prepared with time-honored kitchen techniques.

Dietary Substitutions

If you need to accommodate dietary restrictions, gruyère (coarsely grated) can be substituted with an equivalent volume of seasonal vegetables, legumes, or a protein alternative of your preference.

Chef Technique Tips

Season in stages rather than all at once at the end. Salting components as they cook draws out excess moisture, intensifies natural sugars, and builds harmonious depth of flavor throughout the dish.
